Per SERVING (makes 12)
INGREDIENTS
4 small corn tortillas
4 large eggs
1 cup canned black beans, drained and rinsed
1 cup salsa (store-bought or homemade)
1/2 cup shredded cheese (cheddar, Monterey Jack, or your favorite)
1 avocado, sliced
1/4 cup chopped fresh cilantro
1 lime, cut into wedges
1 tablespoon olive oil or butter
Salt and pepper to taste
Optional toppings: sour cream, jalapeños, hot sauce, or diced tomatoes
1. Warm the Tortillas
Heat a skillet over medium heat and lightly toast the corn tortillas for about 30 seconds on each side until warm and slightly crispy. Set aside.
2. Cook the Eggs
In the same skillet, add a little olive oil or butter. Crack the eggs into the skillet and cook them sunny-side up or to your preferred doneness. Season with salt and pepper.
3. Heat the Beans
While the eggs are cooking, warm the black beans in a small saucepan or microwave until heated through.
4. Assemble the Huevos Rancheros
Place two warm tortillas on each plate. Spread a layer of black beans over the tortillas, followed by a spoonful of salsa. Carefully place a cooked egg on top of each tortilla.
5. Add Toppings
Sprinkle shredded cheese over the eggs, then garnish with avocado slices, fresh cilantro, and a squeeze of lime juice. Add any optional toppings like sour cream, jalapeños, or hot sauce for extra flavor.
6. Serve and Enjoy!
Serve your easy huevos rancheros immediately while warm. Pair with a side of fresh fruit or a cup of coffee for a complete meal.
